Recipe: Nectarine, Pancetta and Brie Salad


It’s hot! It’s so hot that poor Eadie is sprawled out on the kitchen floor looking very sorry for herself.

Today is the hottest day of the year so far (I think it went to about 32 degrees) and the idea of cooked meal sounds horrible. Enter my super quick nectarine salad which meets the Domestic Goddess criteria.

In all honesty, this recipe is completely fluid – you can add what you like and how much you like but just so you have somewhere to start with, here’s how you make it

Ingredients

  • 4 nectarines (or you could maybe use plums?) sliced
  • Rocket salad leaves
  • Pancetta – I used about 100 gm cut to strips
  • 1 tbsp olive oil
  • Brie – approx 150 gm
  • Salt to taste
  • 1 tsp Lime juice
  • 1 tbsp balsamic vinegar

Put it in the fridge for about 30 minutes and serve chilled.

This salad took less than 15 minutes to prepare and is delicious.
